We eat avocado’s about three times a week at our house. Fresh avocado’s have become a staple in our fruit basket in our kitchen. I personally have been aware of their health benefits and made them a part of my diet even before I had kids, but did you know that avocado’s also have huge benefits during pregnancy as well?

Avocados provide a good source of folate. I remember when I was pregnant my doctors gave me a prescription for even more folate than what came with my prenatal vitamin. Consult your doctor on what is best for your pregnancy.

Here are some of the things we eat weekly with avocados.
Avocado Toast – great for a morning breakfast
Avocado slices (my son loves to eat avocado slices by themselves with salt)
Avocado + Banana smoothie
Add avocado slices to a salad
Blend an avocado with a vinaigrette to make a salad dressing
Avocado Brownies – Yes you can add it into your brownies for added nutrition. The taste is mild and it’s the perfect way for my food allergic son to get extra nutrition + healthy calories with his sweets.
Avocado + turkey bacon taco – We love to eat these on Sunday mornings. 🙂
Tostadas + Chalupas – Top it with avocado slices or mash it up for a guacamole topping. This is on our meal plan menu at least once a week.
Avocado Tuna Salad – I don’t know why this combo of tuna + avocado is so delicious but it’s one of my fav lunch items.
Healthy avocados are a nutrient-rich, versatile fruit that can be eaten alone or used in a variety of tasty recipes – from soups to salads to smoothies – all of which can fit into a sensible eating plan.
