It was 30 degrees yesterday and we were stuck inside all day. So we spent most of the day watching movies and trying out some new recipes. I just recently purchased the Instapot pressure cooker and I have been excited to try some new recipes because we are already thinking about New Year’s Eve. Eating soup on New Year’s Eve was a Latino tradition in my family growing up and one that I want to carry on with my family. Yesterday we made an amazing Chipotle Chicken soup that is a twist on our traditional Chicken soup.
The soup is made with white rice, black beans, Knorr® Chicken Flavor Bouillon, La Morena® Chipotle Peppers in Adobo and chicken and it is amazing!
The best thing about this recipe is that it’s quick and easy. I need quick and easy these days with three kids because sometimes I get only minutes for dinner prep.
This soup recipe takes just a few minutes to prep because you can throw the chicken in FROZEN!
The chicken comes out so perfect and tender. My favorite kind of recipe!
Ingredients:
1/2 can of black beans
4lbs (2-3 pieces) of frozen chicken breast
1/2 cup white rice
3 – 4 tsp Knorr® Chicken Flavor Bouillon Granulated Bouillon – 2.2 lbs
3.5 oz La Morena® Chipotle Peppers in Adobo 7oz
4 cups of water
1/2 cup white rice
1/2 onion, chopped
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1 tsp oil
Directions
You want to start by adding your chopped onion to the Instapot with the oil and use the Saute mode. Saute onions (uncovered) until they are soft, then add in your black beans, spices, chicken, water, bouillon, chipotle peppers and rice. The chicken flavor bouillon and the water will make your soupy broth, so you will want to add 1 tsp per cup of water added. So for his recipe, you will be adding 4 tsp of chicken flavor bouillon and 4 cups of water.
Put it all together in the instapot, give it a mix and then put the top on. Next, you will use Soup mode and set it for 15. Be sure that you have the top knob set to sealing and you’re set! I like to use the quick release and shred the chicken while it’s in the pot, then I leave it on warm until everyone is done eating.
It came out delicious!
Both the Knorr® Chicken Flavor Bouillon and the La Morena® Chipotle Peppers in Adobo are available at Walmart in the Hispanic Aisle. They have the flavor I can count on to make my dishes taste amazing! I don’t mind splurging on quality products to get the best taste.
The soup was a hit and we will definitely be making a batch for our New Year’s Eve celebration.
