We have one VERY picky eater in our family. It’s no secret, I’m always talking about it on my blog and sometimes even ask for advice from my readers on what to feed my picky 3 year old. She’s been this way all her life. I’m constantly trying to find ways to incorporate the things she needs in their diet and make it good or fun for her so she will eat it. One way I’ve been successful in getting fruits and protein in her diet is with Soy smoothies. She loves the strawberry and banana combination and sometimes we even add blueberries when they are in season. I have also been known to sneak some veggies in there. Spinach leaves are good because they are inconspicuous. 🙂 They don’t really add any flavors to the smoothie, although it will turn the smoothie a little green. 🙂 Our favorite milk to use in our fruit and veggie smoothies is Vanilla Soy milk. It’s delicious!

This smoothie recipe is so quick and easy and I personally love them for my morning and afternoon snacks. Being 4 months pregnant I find that I have to keep m stomach full, if not I start feeling nauseated. 🙁 These smoothies are a great way for me to stay full, but not overly stuffed.
The amounts depend on how much I want to make. For 1-2 cups, I use the following recipe.
1 1/2 cup Soy milk
1 cup ice
3-4 large strawberries
1/2 cup blueberries
A little stevia to sweeten if desired.
And that’s it! We love it! We all drink it up. And I don’t feel guilty for giving my kids (and myself) a smoothie as an afternoon snack. 🙂
