I am sharing with you all one of our favorite homemade soup recipes to make during the winter. It’s easy and delicious and made with fresh veggies. We make this about once a week and my girls love it. You can use any kind of noodles from alphabet noodles, stars or just regular ol noodles.
Here is what you need:
2-4 fresh ripe tomatoes
1 peeled garlic clove or 1 tsp of minced garlic
1/4 cup chopped white onion
1 cup water
3 tablespoons olive or vegetable oil
2 cups pasta noodles
salt to taste
4-8 cups chicken or vegetable broth
We use 2 fresh tomatoes from the vine and 4 cups of vegetable broth and it gives us about 5 servings.
First puree the tomatoes, 1 cup of water, onion and garlic in a blender.
In a pot heat oil and add 2 cups of pasta once heated. Cook pasta for a few minutes until the pasta gets toasty and brown.
Add in tomato puree and cook another few minutes until it gets thick and red. It will turn a darker red once it has thickened. You will be able to smell some deliciousness at this point. 🙂 Once the puree has cooked, add in chicken or vegetable broth and stir until boiling then reduce heat and simmer until the soup thickens. Soup should get thicker but still be brothy. Add in salt to taste and serve!
My picky toddler loves this which is why we make this so often. She never asks for MORE unless it’s macaroni or Eggos but she can eat about 2 bowls of this soup. It’s a great homemade soup for the winter. Enjoy!
