How to make Christmas Cookie Pops

I’m not sure what exactly it is, but put a cookie on a stick and cookies become so much more exciting to my kids. :) They LOVE these!

How to make Christmas Cookie Pops

If I had time to bake I would actually make the cookie dough but with two toddlers, I choose to go with the quickie version of everything these days. I use my favorite sugar cookie mix – Frozen Pillsbury Sugar Cookie dough. This dough can be sort of sticky so we use parchment paper to roll it first on a cookie sheet, and then I put it back in the fridge for about 30 minutes to harden back up again or the freezer if I’m short on time for about 15 minutes.

Once it has hardened a bit it’s now easier to use cookie cutters to cut out your favorite shapes. We decided on Christmas cookies this time around because it’s never too early for Christmas at our house, we even brought out the Christmas tree this weekend! I use popsicle sticks and put them in the cookie after transferring them to the cookie sheet. Then I get a little tiny smidge of dough and squeeze the bottom of the cookie onto the stick to make sure it gets baked onto the stick. Don’t forget the Christmas sprinkles!
