I wish I could say that when I bake cakes I always make homemade. But the truth of the matter is, I just don’t have time to make cakes from scratch these days.
Most of the time I will bake a cake from a box and we’re good with that. Box cakes have come a long way these days and they’re actually really good. What I won’t settle on though is frosting. I just can’t do store-bought cake frosting. so I will make my own almost all of the time.
Today I want to share with you our favorite way to make our mini-personal sized microwave cakes with our amazing frosting recipe.
If you follow my blog then you know that we love to have parties. And even when we don’t have anything to celebrate we still love to bake cakes! Sometimes the kids play birthday party and all of their dolls attend. Sometimes they will ask me to make a cake for the occasion and I am always happy to oblige.
One thing I recently discovered was microwave mug cakes. This is the PERFECT way to make the kids mini cakes.
So here is what we do.
First get your favorite box cake and make the recipe according to the box.
Once you have the mix ready pour the cake batter into a microwavable mug.
Microwave for 3-5 minutes, first checking the cake at 3 minutes and if it’s not done add a few more minutes.
Your microwave mini-mug cake is ready when the sides pull away from the mug and the top of the cake gets that wet look. You can also use a straw or a knife to stick it through the cake all the way to the bottom. If it comes out clean the cake is done.
Next, you want to make our delicious cake frosting and it only needs 3 ingredients! We like to use Shamrock Farms Heavy Whipping Cream in our frosting because they have a reputation for being rich and creamy. They are made with real dairy from cows never treated with the growth hormone rBST.
2 cups Shamrock Farms Heavy Whipping Cream
4 tbsp regular sugar
1/3 package banana instant pudding mix
First, before you start making your frosting, put a stainless steel bowl in the freezer for 30 min prior to whipping. This will help frosting thicken quicker. If you don’t put your bowl in the freezer prior to mixing then you will most likely need to put your frosting in the fridge after mixing in order to thicken.
To make your frosting put all ingredients into your cold bowl and begin mixing and/or whipping.
Add your Shamrock heavy cream and then your sugar. Next, you will want to slowly add in the instant pudding mix a little at a time. I used banana for this one but you can use any flavor. I mixed about 1/3 package of the instant pudding mix into mine. You will want to keep adding the pudding mix in and continue checking for both taste and consistency. You want to whip your frosting until you see it start forming peaks.
If frosting becomes too thick you can add a tsp of milk to it until it becomes thinner. If it’s still too thin you can put frosting back in the fridge to thicken a bit before frosting your cake.
I let the kids decorate their own cakes with sprinkles to top it off. We love the idea of these mini-microwave cakes and the frosting is amazing! You gotta try!
