Weight Watchers has some delicious foods at the grocery store. One of my favorite’s to use in our healthy recipes is the Weight Watchers cheese. The cheese is made with real milk and has less fat than regular cheese. The Weight Watchers new SmartPoints system delivers much more than calorie counting, giving you the flexibility to eat real food and still lose weight.
Here’s what you need for these delicious Veggie Corn Bean Nachos.
15 oz can unsalted black beans rinsed
15 oz can corn unlsalted rinsed
2 medium fresh tomatoes chopped
1/3 cup cilantro
Baked low fat tortilla chips
1/2 cup shredded romaine lettuce
1/2 fresh avocado chopped
2/3 cup of reduced fat Mexican Style Blend Cheese or 4 sticks of Weight Watchers Light Jalapeno Cheese finely chopped.
To make your veggie base, blend chopped tomatoes with the cilantro. Then add your black beans and corn in a bowl and mix. Let sit in the fridge for about 30 min or longer to chill.
Top tortilla chips with corn and bean salsa and sprinkle cheese. Optional: Preheat oven to 425. Let bake 10 minutes or until cheese browns. Then, top with lettuce and avocado.
I eat this both ways, cold and straight from the oven and it’s amazing and filling!
